Ingredients
- 8 Cherries
- 50g Rolled Oats*
- 75g Almonds
- ½ Banana
- 1 tbsp Honey**
- 1 tsp Ground Cinnamon
- 100ml Filtered Water
- 1 tbsp Coconut Oil
How To Make
1. Prepare: Cut the cherries into quarters and remove the stalk and stone. Place the oats and almonds in a large container of a hand blender or Juice Master Super Blend and blend for 10 – 15 seconds until they form a flour.
Add the banana, honey, cinnamon and filtered water and blend for 10 – 20 seconds until the mixture forms a batter. Then add the cherries and mix.
2. Cook: Place the coconut oil in a frying pan and heat over a medium to high heat, then add a quarter of the mixture to the pan and shape into a pancake and cook for 2 – 3 minutes each side, until golden. Repeat using the rest of the coconut oil and mixture. Depending on the size of your pan, you can probably cook two at a time.
3. Serve: Enjoy these amazing little pancakes, whilst warm and gooey!
*Oats are technically gluten-free but unfortunately some commercial oats have been cross contaminated with wheat, barley or rye, during the harvesting, storage, milling or processing, so be a little careful here if you are particularly sensitive.
** If vegan, use an alternative sweetener.
