The pulpy white flesh found inside the pepper is a rich source of flavonoids and can be eaten, even though it is more commonly thought of  as waste and thrown away!

In comparison to green peppers, red peppers are known to have more vitamins and nutrients and contain the antioxidant lycopene. The level of carotene, like lycopene, is nine times higher in red peppers. Red peppers have twice the vitamin C content of green peppers.

Peppers cleanse the liver and intestines so are a great addition to a detox program. They contain lycopene, a renowned anti-cancer agent. They have a slightly sweet flavour and work well with vegetable juices.

Peppers are packed with vitamin C that is also known as an antioxidant. The antioxidants in peppers have a protective effect against free radicals; this can have beneficial effects on ageing, help to prevent cancer, and produce clear skin.  Beta-carotene is one of the main carotenoids in peppers.  Studies have shown that carotenoids have anti-inflammatory and anti-carcinogenic activity.
