Marvelous Magic Mushroom Soup

Ingredients

  • 250g mushrooms
  • 2 cloves of garlic
  • 1 small red onion
  • 1 vegetable stock cube
  • 1 tablespoon vegetable oil
  • Freshly ground black pepper
  • 100g reduced-fat creme fraiche

Instructions

  • Wash the mushrooms and chop into small chunks.
  • Peel the garlic and onion and chop into small pieces.
  • Prepare the stock by dissolving the stock cube in 1 pint (570ml) of boiling water.
  • In a large saucepan heat the oil and add the garlic, onion and mushrooms.
  • Gently sweat the vegetables over a medium heat for 10 minutes then add the stock and seasoning, bring to the boil and simmer for a further 10 minutes.
  • Remove from the heat, add the creme fraiche and using a blender (hand or jug), blend the soup until smooth.
  • Pour into a bowl and enjoy.

Why this is good for you

This is so filling you won't have 'mushroom' for anything else! Like all vegetables, mushrooms are 'magic' (sorry to disappoint if you actually thought this recipe contained 'real' magic mushrooms as in the type that make you feel like you're flying with Lord Lucan - for that you need to go to infamous Amsterdam).

Mushrooms are one of the few vegetables that should NEVER be juiced, so this recipe is great for exposing you to the many health benefits the humble mushroom has to offer. Mushrooms contain several key nutrients including selenium, copper, potassium, folate and niacin. Selenium is needed to help the antioxidant system function properly, and this is vital to help reduce the damaging effect of free radicals in the body. The mineral potassium helps the body maintain normal heart rhythm, fluid balance and muscle and nerve functions.
