Ingredients

  • 2 beef tomatoes
  • Small handful of fresh basil
  • 150g fresh buffalo mozzarella
  • Extra virgin olive oil
  • Balsamic vinegar
  • Crushed black pepper

Instructions

  • Wash the tomatoes and basil.
  • Cut the tomatoes and mozzarella into generous slices.
  • Layer the tomato, mozzarella and basil on a plate serving dish or plate
  • Drizzle with olive oil and balsamic vinegar and sprinkle with freshly ground pepper.

To make this vegan/vegetarian… simply leave out the cheese or replace with an alternative.
