Brown Rice Salad

Ingredients
- 100g (4oz) long-grain brown rice or wild rice
- 2 tbsp (30ml) cold-pressed virgin olive oil
- 1 tbsp (15ml) cider vinegar
- ½ clove garlic, crushed
- ½ tbsp fresh thyme, finely chopped
- 35g (1 ½oz) organic cheese, grated
- 4 spring onions, finely chopped
- 1 stick of celery, thinly sliced
- 2 dried dates, chopped
- Sea salt
- Freshly ground black pepper
Instructions
- Cook the rice in a large pan of salted, boiling water (for full cooking instructions please refer to the packet).
- Rinse, drain and cool the rice.
- Meanwhile mix together thoroughly the oil, vinegar, garlic and thyme to make a dressing.
- Place all the ingredients in a large bowl, add the rice and oil dressing and mix thoroughly.
- Leave to stand for 30 minutes before serving.
