Avocado , Alfalfa and Tomato Salad


  • 100g Mixed Salad Leaves
  • 50g Alfalfa Sprouts (or similar)
  • 100g Sun-blush Tomatoes
  • 1 Large Ripe Avocado
  • 1/2 Lemon (juice of)
  • saltRock, amount: 1 pinch
  • 2 Tablespoons of Extra Virgin Olive Oil
  • 2 Tablespoons of Balsamic Vinegar


Wash the salad leaves and place in a bowl. Add the alfalfa sprouts and sun-blush tomatoes to the salad leaves. Remove the avocado flesh, chop into pieces and then add to the salad. Make up the salad dressing by combining the lemon juice, balsamic vinegar and olive oil. Pour the dressing over the salad leaves and enjoy!

One of the most nutritionally concentrated sprouts, alfalfa sprouts contain high levels of protein, calcium, carotene, iron, magnesium, chlorophyll and potassium. They also have a high concentration of phytochemicals.  Avocados contain one of the highest levels of dietary fibre of any fruit, and, interestingly, contain approx 60% more potassium than bananas. Who knew!
