Mozzarella, Mango & Sun Blushed Tomato On A Bed Of Fresh Herbs

Ingredients:
  • Mango: 1/2 (ripe)
  • Fresh Basil: 20g
  • Fresh Mint: 20g
  • Fresh Coriander: 20g
  • Mozzarella: 150g
  • Baby Leaf Spinach: 40g
  • Sun-blushed Tomatoes: 60g
  • Extra Virgin Olive Oil: 1 Tbsp
  • Apple Cider Vinegar: 1Tsp
  • Black Pepper: 1 Generous pinch

Instructions (Serve 2):

 

Remove the flesh from the mango, discard the skin and stone, then cut into slices. Remove the leaves from the basil, mint and coriander and discard the stalks. Tear the mozzarella into bite sized chunks (this looks so much better than if you just cut it with a knife).

Then place all the ingredients in a salad bowl, drizzle with oil and vinegar, toss lightly and finish with a generous sprinkling of black pepper.
